Warm Zesty Broccoli Salad

  • 1 Lb broccoli florets
  • 2 shallots , minced
  • 1 small onions , thinly sliced
  • 1 tsp orange zest
  • 1/2 tsp Dijon mustard
  • 3 tsp tarragon wine vinegar
  • 1 tsp dry sherry (optional)
  • 2 Tbsp olive oil
Place broccoli florets in a steamer basket over boiling water. Cover saucepan and steam 4-5 minutes, or until barely tender. Rinse broccoli under cold running water and drain thoroughly.

Transfer broccoli to a serving bowl. Add shallots, onion, and orange zest and toss lightly. Combine remaining ingredients and salt and pepper to taste in a jar with a tight-fitting lid. Shake vigorously until emulsified. Pour dressing over broccoli mixture.
