Cornmeal Pancakes

  • 1 1/2 Cup yellow cornmeal
  • 4 Tbsp all purpose flour
  • 2 Tbsp sugar
  • 1 tsp baking soda
  • 1/2 tsp salt (optional)
  • 2 Cup buttermilk
  • 2 Tbsp unsalted butter , melted
  • 1 eggs , separated
  • 1 1/4 Cup frozen corn , thawed
  • 3 tsp vegetable oil
  • 4 Fl Oz pure maple syrup , warm for serving
Combine first 5 ingredients in a mixing bowl and mix thoroughly. Make a well in the center. Add buttermilk, butter and egg yolk. Stir quickly until ingredients are just moistened. Stir in corn until mixture is just combined (batter will be somewhat lumpy). Using a clean bowl and clean electric beaters, beat egg white until stiff but not dry. Fold beaten egg white into batter. Heat a griddle or nonstick skillet over medium heat. Heat a portion of the oil. Working in batches, spoon 3 Tbsp batter per pancake onto griddle. Cook about 2 minutes or until bottom is golden and bubbles appear on surface. Turn and cook another 2-3 minutes or until golden on bottom. Transfer pancakes to a platter and keep warm. Serve with warm maple syrup.
