Mexican Cancun Egg Bake with Turkey Ham

  • 6 eggs
  • 4 Tbsp all purpose flour
  • 1/2 tsp baking powder
  • 3/8 pinch salt (optional)
  • 3 1/2 Oz canned green chilies , diced (wear rubber gloves)
  • 1 Cup cottage cheese, uncreamed
  • 1/2 Lb Monterey Jack cheese , shredded
  • 3 tsp unsalted butter
  • 1 1/2 Lb turkey ham , cut into .75 in. slices
  • 1 Cup salsa
Preheat oven to 375 ℉. Whisk eggs in a mixing bowl until thoroughly blended. Add flour, baking powder and salt and mix thoroughly. Stir in next 3 ingredients, mixing thoroughly. Transfer to a buttered 9 inch baking dish. Bake 30-35 minutes or until center is set. Let stand 5 minutes before cutting into squares. Melt butter in a heavy nonstick skillet over medium heat. Saut'e turkey ham about 3 minutes per side or until browned. Transfer to a platter and keep warm until ready to serve with eggs and salsa.
