Black Bean Chili

  • 1 tsp unsalted butter
  • 1/4 Cup onions , minced
  • 1/2 Lb ground beef
  • 1 can (15 oz) black beans , drained
  • 1/2 tsp turmeric
  • 7/8 pinch cayenne
  • 7/8 pinch pepper
  • 2 scallions , sliced
  • 1 Cup plain lowfat yogurt
Melt butter in a heavy nonstick skillet over medium high heat. Saut'e onion 5-7 minutes or until golden. Add ground beef and saut'e 3-4 minutes or until meat is lightly browned. Stir in black beans, turmeric, cayenne and pepper and saut'e 3-4 minutes. Reduce heat to medium low. Stir in half the scallions. Saut'e 2-3 minutes, stirring constantly until scallions are softened. Remove from heat, sprinkle with remaining scallions and serve with yogurt.
