Greek Pasta Salad

  • 4 tomatoes , seeded and diced
  • 1/2 Lb feta cheese , crumbled
  • 4 scallions , minced
  • 3 Tbsp olive oil
  • 4 Tbsp watercress , chopped (optional)
  • 3 tsp lemon juice
  • 1/2 Cup Kalamata olives , or other black olives
  • 3/4 Lb fusilli pasta , or large elbow macaroni
  • 1/8 pinch salt (optional)
  • 1 green bell peppers , seeded and cut into julienne strips
  • 1 lemons , cut into wedges
Combine first 7 ingredients in a salad bowl. Cook pasta in boiling water until al dente. Drain pasta and rinse under cold water. Drain thoroughly. Stir pasta into tomato mixture. Season with salt and pepper to taste. Garnish salad with bell peppers and lemon wedges.
