Lower Fat Creamy Broccoli Soup

  • 1 1/2 Cup broccoli florets
  • 4 Tbsp celery , diced
  • 4 Tbsp onion , chopped
  • 1 Cup low sodium chicken broth
  • 2 Cup skim milk
  • 2 Tbsp cornstarch
  • 1/4 pinch thyme , ground
  • 4 Tbsp shredded Swiss cheese
Place first 4 ingredients in a heavy pan over medium high heat. Bring to a boil. Cover pan, reduce heat to low and cook 8 minutes, or until vegetables are tender. Combine milk, cornstarch, thyme and salt and pepper to taste in a medium bowl. Mix well and pour into pan with vegetables. Cook over medium heat, stirring constantly, until soup begins to thicken and boil. Remove from heat and stir in cheese.
