Bean and Cheese Sandwiches

  • 1 can (15 oz) black beans , drained
  • 4 Tbsp crushed tomatoes
  • 1/4 tsp cumin seed
  • 4 hoagy sandwich buns , cut in half lengthwise
  • 3/4 Cup cheddar cheese , shredded
  • 1 Cup salsa
Preheat oven to 400 ℉. Combine beans, tomatoes and cumin in a blender or food processor. Process until smooth. Transfer to a heavy nonstick skillet over medium heat. Stir 2-3 minutes or until hot. Remove from heat and set aside. Remove a small amount of center of each bread half to make a shallow hollow and divide beans among sandwich halves. Sprinkle with cheese. Place sandwiches on a baking sheet and bake in oven about 5 minutes or until cheese is melted. Serve sandwiches with salsa.
