Finnish Flat Bread

  • 1 1/2 Cup all purpose flour
  • 3/4 Cup whole grain flour
  • 2 Tbsp sugar
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 4 Tbsp unsalted butter
  • 1 Cup buttermilk
Preheat oven to 350 ℉. Combine first 6 ingredients in a bowl or food processor. Cut in butter until mixture resembles coarse meal. Add buttermilk and process just until dough is moistened. Transfer to a floured work surface and knead 3-5 minutes. Pat out to 1 inch thickness on an ungreased baking sheet or pizza pan. Bake 30 minutes or until golden. Cool 10 minutes before transferring to a wire rack.
