Ground Beef Beef Stroganoff

  • 1 Lb ground sirloin
  • 1/2 Cup soft white breadcrumbs
  • 2 tsp onion , minced
  • 3 Fl Oz skim milk
  • pinch nutmeg
  • pinch ground cloves
  • 3 tsp olive oil
  • 1/2 Lb fettuccine pasta
  • 2 Tbsp all purpose flour
  • 2 Cup beef stock
  • 4 Fl Oz fat-free sour cream
Combine first 6 ingredients in a bowl. Season with salt and pepper to taste and mix thoroughly. Shape into 1 inch balls. Heat oil in a heavy nonstick skillet. Saut'e meatballs 8 minutes, turning frequently, until browned. Transfer meatballs to a platter, set aside and keep warm. Cook fettuccine in boiling salted water 8-10 minutes, or until al dente. Drain, set aside and keep warm. While pasta is cooking, heat oil in same skillet and add flour. Stir in stock, blending with a whisk. Simmer over medium heat 3 minutes, stirring continuously, or until slightly thickened. Remove from heat. Stir in sour cream. Add meatballs and cook over medium low heat until heated throughout. Do not boil. Serve over fettuccine.
