Mushroom Salad

  • 3/4 Lb baby mushrooms , sliced
  • 3 shallots , or green onions, chopped
  • 3/4 Cup fresh carrots , grated
  • 2 3/4 Tbsp parsley , chopped
  • 1 1/4 Tbsp fresh chives , chopped
  • 1 Cup bean sprouts
  • 2 3/4 Fl Oz olive oil
  • 2 Fl Oz lemon juice
  • 2 3/4 Tbsp cider vinegar
  • 1/2 tsp sugar
Combine first 6 ingredients in a medium bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well. Pour over salad and toss.
