Traditional Potato Salad

  • 5 medium potatoes , peeled, chopped
  • 1 egg yolks
  • 1 Tbsp lemon juice
  • 1 clove garlics , crushed
  • 1/2 tsp French mustard
  • 4 Tbsp olive oil
  • 4 Tbsp vegetable oil
  • 1 1/4 Tbsp milk
  • 5 green shallots , chopped
  • 2 3/4 Tbsp parsley , chopped
Place potatoes in a steamer basket over boiling water. Cover pan and steam 10 minutes, or until tender. Cool. To create the mayonniase, place next 4 ingredients in a blender or food processor; process until smooth. Add oils gradually in a thin stream while motor is operating. Stir in milk. Combine potatoes, shallots, half the parsley, and the mayonnaise in bowl and mix well. Sprinkle with remaining parsley.
