Snow Pea and Apple Salad

  • 1 Lb snow peas
  • 1 apples , sliced
  • 1 1/4 Tbsp lemon juice
  • 1 Cup pecan nuts , or walnuts
  • 2 Fl Oz mayonnaise
  • 4 1/4 Fl Oz plain low fat yogurt
  • 2 3/4 Tbsp fresh chives , chopped
Place snow peas in a steamer basket over boiling water. Cover pan and steam 4 minutes or until bright green and just tender. Remove from steamer basket and run under cold running water. Drain. Combine apple and lemon juice in a bowl. Stir in snow peas and nuts. Combine remaining ingredients in a bowl and mix well. Pour over dressing and toss.
