Mushroom Snack

  • 2 3/4 Tbsp olive oil
  • 1 medium onions , finely chopped
  • 1 clove garlics , crushed
  • 2 3/4 Tbsp tomato paste
  • 2 Fl Oz red wine
  • 2 bay leaves
  • 1 tsp sugar
  • salt and pepper
  • 1 Lb button mushrooms
  • 1 can tomatoes , drained and chopped
  • 1/2 Cup parsley
  • 1/2 Cup basil
Heat oil in a large frying pan over a moderate heat; add onion and garlic, cook 3-4 minutes. Stir in tomato paste, wine, bay leaves, sugar, and pepper. Add whole mushrooms and tomatoes; cook gently, uncovered, for about 6-7 minutes or until just tender. Remove bay leaves; spoon mushrooms and sauce into a serving dish and sprinkle with chopped fresh herbs. Suggestion: Serve with rolls.
