Mussels in Rich Tomato Sauce

  • 1 1/4 Tbsp olive oil or vegetable oil
  • 2 onions , thinly sliced
  • 3 1/4 Cup tomato sauce
  • 4 cherry tomatoes , sliced
  • 2 tsp brown sugar
  • 4 1/4 Fl Oz water
  • 2 3/4 Tbsp dry white wine or clam juice
  • 1/2 bunch basil leaves , chopped
  • 2 1/4 Lb mussels , cleaned
Heat oil In a large saucepan over medium heat; saut'e onion for 3 minutes. Add all other ingredients except mussels and bring to a boil. Cook for 7-10 minutes. Add mussels and cook for about 5 more minutes, or until mussels open slightly.
