Vegetarian Chili Con Carne

  • 2 3/4 Tbsp vegetable oil
  • 1 onions , diced
  • 1 red bell peppers , chopped
  • 4 Tbsp tomato paste
  • 1 Lb peeled canned tomatoes
  • 1 packet taco seasoning mixes
  • 2 Cup water
  • 1 can (15 oz) red kidney beans
  • 1 Lb button mushrooms , halved
Heat oil in a saucepan over a moderate heat; add onion and bell pepper and saut'e for 2 minutes. Stir in tomato paste, tomatoes and their juice, taco seasoning, and water. Simmer for 20 minutes; stir in red kidney beans and mushrooms; simmer for 5 more minutes. Suggestion: Serve with rice or baked potato.
