Italian Garden Pasta Salad

  • 3/4 Lb mostaccioli pasta , or small tube pasta
  • 2 tomatoes , peeled and chopped
  • 1 zucchini , trimmed and thinly sliced
  • 3 Oz black olives , pitted and sliced
  • 1/4 Cup scallions , chopped
  • 3 Fl Oz tarragon wine vinegar
  • 4 Tbsp olive oil
  • 2 tsp basil , or 3 Tbsp fresh, minced
  • 1 1/2 tsp salt (optional)
  • 1/2 tsp dry mustard
  • 1/4 tsp pepper
  • 1 clove garlics , crushed
Cook pasta in boiling salted water until al dente. Drain and transfer to a salad bowl. Add next 4 ingredients to pasta. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over salad and toss. Let sit 30 minutes for flavors to meld.
