Vanilla Ice Cream with Sauteed Pears and Rum

  • 3 tsp unsalted butter
  • 1/4 Cup brown sugar
  • 4 ripe firm pears , cored and sliced lengthwise
  • 1/2 tsp ground cinnamon
  • 3 Tbsp lime juice
  • 3 Fl Oz dark rum
  • 2 Cup vanilla ice cream
Melt butter with brown sugar in a heavy nonstick skillet over medium heat. Saut'e pears and cinnamon 4-5 minutes or until pears begin to soften. Stir in lime juice and rum. When liquid starts to simmer, keeping face and body away from skillet, ignite quickly with a lit match. When flames subside, remove from heat. Serve with ice cream.
