Country Vegetable Soup

  • 1 3/4 Oz butter
  • 1 onions , chopped
  • 2 carrots , chopped
  • 2 celery stalks , chopped
  • 1 large potatoes , chopped
  • 1 Cup stewed canned tomatoes
  • 1 1/4 Pint vegetable broth
  • 1 tsp tomato puree
  • salt and pepper
Melt the butter in a large saucepan; add the vegetables and cook until soft. Add tomatoes, stock, tomato pur'ee, and salt and pepper to taste. Bring to a boil, cover, and simmer for 30 minutes. Remove from heat, cool slightly, then pur'ee in a blender or food processor. Return to the pan, bring to a boil and simmer for another 5 minutes.
