Eggs Florentine

  • 1/2 Lb frozen chopped spinach , thawed
  • salt and pepper
  • 4 eggs , soft-boiled
  • 1 Oz butter
  • 1 Oz plain flour
  • 1 1/4 Cup milk , or cream
  • 1/2 Lb cheddar cheese , grated
Line a shallow ovenproof dish with the spinach. Season well with salt and pepper. Place the eggs on top. To make the sauce, melt the butter in a nonstick pan and stir in the flour. Gradually stir in the milk or cream and cook, stirring, until thickened. Lower the heat, add two thirds of the cheese and stir until melted, then pour over the eggs. Sprinkle with remaining cheese. Bake on the top shelf of a preheated 375 ℉ oven for 15 to 20 minutes, until golden brown. Serve immediately.
