Mexican Ham and Egg Bake

  • 6 eggs
  • 4 Tbsp all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 Lb canned green chilies , diced (wear rubber gloves)
  • 1 Cup cottage cheese, uncreamed
  • 1/2 Lb Monterey Jack cheese , shredded
  • 2 tsp unsalted butter
  • 1 1/2 Lb cooked ham , cut into .75 in. slices
  • 1 1/2 Cup salsa
Preheat oven to 375 ℉. Whisk eggs in a mixing bowl. Add flour, baking powder and salt and mix thoroughly. Stir in next 3 ingredients. Transfer to a buttered 9 inch baking dish. Bake 30-35 minutes, or until center is just set. Let stand 5 minutes before cutting into squares. Melt butter in a heavy nonstick skillet over medium heat. Saut'e ham 2-3 minutes per side until browned. Transfer to a platter and keep warm until ready to serve with eggs and salsa.
