Tuna and Green Vegetable Salad

  • 4 1/4 Fl Oz vegetable oil
  • 2 tsp lemon rind , grated
  • 2 Fl Oz lemon juice
  • 1 clove garlics , crushed
  • 2 3/4 Tbsp fresh chives , chopped
  • 1 Cup broccoli , chopped
  • 3 1/2 Oz canned green beans , drained and chopped
  • 3 1/2 Oz snow peas
  • 2 Cup lettuce , torn in large pieces
  • 1/2 Lb canned tuna , drained and flaked
  • 1 onions , sliced
  • 2 medium zucchini , sliced
Combine first 5 ingredients in a jar with a tight-fitting lid and shake well. Add broccoli and beans to a pan of boiling water. Return to a boil and boil 1 minute. Add peas and drain immediately. Rinse under cold water and drain well. Combine all ingredients in a bowl. Add dressing and mix gently.
