Ham, Vegetable, and Lettuce Salad

  • 2 Oz packaged salad
  • 1/4 Cup fresh carrots , grated
  • 3 tsp sun-dried tomatoes , cut-up, drained
  • 2 cherry tomatoes , quartered
  • 2 Oz turkey ham , chopped
  • 1/2 tsp lemon juice
  • 1 1/2 tsp olive oil
  • 1 1/2 tsp Dijon mustard
  • 7/8 pinch sugar
  • 4 Tbsp plain lowfat yogurt
  • 3/8 pinch salt to taste (optional)
  • 4 Tbsp cool herb croutons
Combine first 5 ingredients in a bowl. Combine remaining ingredients, except croutons, in a bowl. Add pepper to taste. Whisk vigorously. Pour dressing over salad and toss. Serve with croutons.
