Creole Hot Dogs and Rice

  • 1 onions , diced
  • 2 Tbsp Cajun seasoning
  • 4 slice bacon , diced
  • 4 beef frankfurters , sliced
  • 3 Cup cooked rice
  • 2 tomatoes , diced
  • 4 Tbsp fresh basil , chopped
Cook bacon in a heavy nonstick skillet over medium high heat 5-6 minutes, or until bacon is slightly crisp. Using a slotted spoon, transfer bacon to a bowl. Set aside. Saut'e onion in bacon drippings 4-5 minutes or until onion is softened. Stir in seasoning and sliced hot dogs and cook 2 minutes. Add cooked rice, cooked bacon tomatoes and cook 3-4 minutes, or until heated through. Remove from heat. Stir in chopped basil and serve.
