Mixed Salad with Sweet Vinaigrette

  • 2 Cup Romaine lettuce , torn
  • 2 Cup spinach leaves , washed and torn into pieces, tough stems discarded
  • 1/2 Cup mushrooms , sliced
  • 1/2 green bell peppers , seeded and cut into 1 in. pieces
  • 1 1/4 Tbsp olive oil
  • 1 clove garlics , crushed
  • 1 1/4 Tbsp white wine vinegar
  • 1/2 tsp basil , or 1 Tbsp fresh, minced
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1/2 tsp sugar
  • 7/8 pinch salt (optional)
Combine first 4 ingredients in a salad bowl. Combine remaining ingredients and pepper to taste in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over salad and toss.
