Lox and Onions and Eggs

  • 3 tsp unsalted butter
  • 1/4 Cup onions , minced
  • 2 Oz smoked salmon , or lox, chopped
  • 2 eggs , beaten just to combine white and yolks
Melt butter in a heavy nonstick skillet over low heat. Saut'e onions 3-4 minutes until very soft but not brown. Stir in lox and cook 1-2 minutes. Add eggs. Turn heat to very low and gently stir until eggs are set. Serve immediately.
