Salami Scrambled Eggs

  • 2 Oz salami , .5 in. thick, cut into strips
  • 2 eggs , lightly beaten
Heat oil in a heavy nonstick skillet over medium high heat. Saut'e salami strips 3-4 minutes, stirring with a wooden spoon until lightly browned. Add eggs and stir 1-2 minutes, until just set. (Cooking time increases with more eggs.
