Greek Orzo 'Rice' Salad

  • 1 Lb orzo pasta
  • 1 yellow bell peppers , seeded and chopped
  • 2 large tomatoes , seeded and chopped
  • 1 bunch arugulas , or dandelion leaves, stemmed and chopped, large
  • 3 tsp fresh sage , chopped
  • 2 Tbsp dill , chopped
  • 3 tsp fresh oregano , chopped
  • 3 tsp fresh thyme , chopped
  • 2 Tbsp fresh basil , chopped
  • 4 Fl Oz bottled balsamic vinaigrette dressing
  • 1 Cup feta cheese, crumbled
Cook orzo in a pot of boiling water about 5 minutes, or until al dente. Drain and rinse with cold water. Combine with vegetables and herbs. Moisten with dressing and chill. Top with feta cheese before serving.
