Sweet & Sour Sesame Salad

  • 1 tsp dark sesame oil
  • 3 tsp umeboshi plum paste
  • 2 Tbsp rice vinegar
  • 4 Tbsp rice syrup
  • 1/2 Cup carrots, grated
  • 1 1/2 Cup mung bean sprouts
  • 2 Cup cucumber , sliced
  • 1 scallions , minced
  • 2 Tbsp sesame seeds
Combine first 4 ingredients in a jar with a tight-fitting lid. Shake vigorously and chill while preparing vegetables. Combine next 4 ingredients in a bowl. Shake dressing again and pour over vegetables. Sprinkle with sesame seeds.
