Garlic Spelt Crackers

  • 2 Cup spelt flour
  • 2 Tbsp maple sugar or date sugar
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp baking powder , non aluminum
  • 4 Tbsp unsalted butter , chilled and cut in pieces
  • 4 Fl Oz rice milk
  • 1 eggs , beaten
  • 3 tsp sesame seeds
Preheat oven to 400 ℉. Combine first 5 ingredients in a mixing bowl. Stir to mix. Drop butter pieces into the flour mixture. Using your fingertips or the tines of a fork, work butter into flour until it is very finely blended. Combine rice milk and egg in a separate bowl and beat well. Mix into the dry ingredients and knead about 5 minutes. Roll dough out as thin as possible on a lightly floured surface. Prick dough with a fork at about 2 inch intervals. Sprinkle sesame seeds over surface of dough. Cut into squares. Arrange squares on a lightly buttered or parchment lined baking sheet. Bake about 10 minutes or until lightly browned. Cool on a wire rack. Crackers may be stored in an airtight container for up to 10 days.
