Spelt Soda Bread

  • 2 1/4 Cup spelt flour
  • 2 Cup whole grain flour
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 3 tsp baking powder , non aluminum
  • 3 tsp caraway seed
  • 4 Tbsp honey
  • 1 3/4 Pint buttermilk
Preheat oven to 425 ℉. Combine first 5 ingredients and 2 whole tsp caraway seeds caraway seeds in a bowl. Mix well. Combine honey and buttermilk in a separate bowl. Stir into the flour mixture to form a very sticky dough. Beat dough vigorously about 2 minutes. Turn dough into buttered or oiled 9x5 inch loaf pan. Sprinkle remaining caraway seeds on top. Dust surface of dough with additional flour. Bake 1 hour and 40 minutes, or until a knife inserted in center comes out clean. Turn out onto a cooling rack and cool before slicing.
