Herbed Crab Sandwiches

  • 1 1/2 Lb lump crab meat
  • 4 Tbsp reduced fat mayonnaise
  • 3 tsp parsley , minced
  • 3 tsp fresh tarragon , minced
  • 2 Tbsp scallions , minced
  • 1/2 Lb cream cheese
  • 2 eggs , beaten
  • 1 tsp Dijon mustard
  • 6 English muffins , split and toasted
  • 6 tomato slice
Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium bowl. In a separate bowl, beat together the cream cheese, eggs, and mustard. Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inch from the heat source for 3 minutes. Add the tomato slices and broil again for 2 more minutes.
