Irish Soda Bread

  • 2 Cup all purpose flour
  • 1 Cup whole grain flour
  • 2 tsp baking soda
  • 1 tsp salt (necessary)
  • 4 Tbsp unsalted butter , softened
  • 4 Fl Oz light molasses , or sorghum
  • 1/2 tsp vanilla extract
  • 1 Cup raisins
  • 2 tsp caraway seed
  • 1 1/2 Cup buttermilk
Preheat oven to 350 ℉. Butter an 8 inch round baking dish and set aside. Sift first 4 ingredients together in a food processor or bowl. Add butter and process until mixture resembles coarse meal.

Add molasses and vanilla and mix thoroughly. Add raisins, caraway and buttermilk and process until mixture is evenly moist. Do not overwork. Transfer dough to a floured work surface. Knead one minute, adding extra flour to keep dough from sticking.

Shape into a ball and transfer to buttered baking dish. Cut an X in the top with a sharp knife. Brush top of bread with milk. Bake 1 hour. Transfer to a wire rack to cool completely before slicing.
