Chicken Chili

  • 3 tsp vegetable oil
  • 1 Lb boneless, skinless chicken breast halves , cut into cubes
  • 3 tsp chili powder
  • 1 can condensed cream of chicken soups
  • 2 Cup water
  • 1 package dry onion soup mixes
  • 2 Lb canned cannellini beans , or white kidney beans, rinsed and drained
  • 1 Cup cheddar cheese , shredded
  • 1 scallions , sliced
Heat oil in a large saucepan over medium heat. Add chicken and chili powder and cook 5 minutes, stirring often. Add chicken soup, water and soup mix. Heat to a boil. Reduce heat to low. Cover and cook 10 minutes. Add beans and heat through. Sprinkle with cheese and scallions.
