Honey-Herb Chicken & Spinach Salad

  • 1 Cup salad dressing
  • 4 Tbsp honey
  • 2 Tbsp lemon juice
  • 1 tsp dried basil , or tarragon leaves, crushed
  • 1 1/4 Lb boneless, skinless chicken breast halves
  • 8 1/2 Cup fresh spinach , torn
  • 1 Cup mushrooms , sliced
Mix dressing, honey, juice and basil. Reserve half the salad dressing mixture. Place chicken on greased rack of a broiler pan. Brush with half of the remaining dressing mixture. Broil 7-10 minutes. Turn; brush with other half of salad dressing mixture. Continue broiling 7-10 minutes, or until chicken is cooked through. Cut chicken into 1 inch pieces; keep warm. Toss spinach and mushrooms; top with chicken. Drizzle reserved salad dressing mixture. Serve immediately.
