Mediterranean Market Salad

  • 1 Lb broccoli florets
  • 3 tsp garlic , crushed
  • 1/2 tsp black pepper , coarsely ground
  • 3 tsp oil
  • 1 1/2 Cup water
  • 1/2 Lb couscous
  • 4 Tbsp Kalamata olives , or black olives, cut in quarters
In large skillet over medium heat, cook broccoli, garlic, and black pepper in oil 5-6 minutes, or until crisp-tender. Add water and bring to a boil. Remove from heat. Stir in couscous. Cover. Let stand 7 minutes. Sprinkle with olives.
