Tropical Chicken Salad

  • 2 Quart water
  • 1/2 Lb shell macaroni
  • 1 3/4 Cup unsweetened crushed pineapple , undrained
  • 3/4 Lb canned mandarin oranges , well drained
  • 4 Fl Oz mayonnaise
  • 4 Fl Oz plain low fat yogurt
  • 2 Cup cooked chicken , cubed
  • 1 Cup celery , sliced
  • 1/2 Cup chopped walnuts
  • 1 Cup shredded coconut
Bring water to a rapid boil, add salt if desired. Gradually add macaroni. Boil 8 to 10 minutes, or until tender, stirring frequently. Drain. In large bowl, blend pineapple with juice, mandarin oranges, mayonnaise, and yogurt. Add chicken, celery, walnuts, and coconut. Mix well. Add shells; toss to coat. Cover and chill.
