Apple Pie a la Mode

  • 2 Tbsp lemon juice
  • 3 Lb Jonathan or Macintosh apples , peeled, cored and cut into .125 in. slices
  • 1/2 Cup sugar
  • 1 tsp vanilla extract
  • 2 Tbsp unsalted butter , cut into small pieces
  • 1 tsp ground cinnamon
  • 1/2 pinch nutmeg
  • 2 Tbsp all purpose flour
  • 2 ready-made pie crust , thawed
  • 1 Quart vanilla ice cream
Preheat oven to 400 ℉. Combine first 8 ingredients in a mixing bowl. Mix thoroughly and set aside. Place one pie crust in the bottom of a 9 inch pie plate. Transfer apple mixture into crust. Top with remaining crust. Pinch crust around edges, rolling under and crimping between thumb and forefinger along the rim of pie plate. Cut a 3 inch slit in center of pie for venting. Bake 50 minutes or until crust is golden and apples are tender. Serve pie with vanilla ice cream.
