Peppered Chicken and Pasta Salad

  • 3 1/2 Oz penne pasta , or other pasta
  • 1 1/4 Tbsp canned green peppercorns , drained, crushed
  • 2 3/4 Fl Oz cream
  • 2 Fl Oz mayonnaise
  • 1/2 tsp lemon zest
  • 1 1/4 Tbsp lemon juice
  • 1/4 tsp sugar
  • 1 Cup pre-cooked chicken breast , chopped
  • 1 purple onions , or other onion, thinly sliced
  • 1 apples , chopped
  • 2 celery stalks , chopped
Cook pasta in a large pan of boiling water 10 minutes, or until al dente. Drain. Rinse pasta under cold water, drain. Combine next 6 ingredients in a bowl and mix well. Combine pasta, chicken, and next 3 ingredients in a bowl. Add dressing to pasta mixture and toss well.
