Cream of Potato Soup

  • 1 1/4 Tbsp olive oil
  • 2 medium onions , chopped
  • 5 medium potatoes , peeled, chopped
  • 1 1/2 Quart chicken stock
  • 1 1/4 Cup cream
Heat oil in a heavy nonstick pan over medium-high heat. Add onion and cook 10 minutes, stirring, or until soft. Add potatoes and stock. Lower heat and simmer, uncovered, 20 minutes, or until potatoes are tender. Transfer mixture in batches to a blender or processor and process until smooth. Return to pan and add cream. Stir over medium heat 5 minutes, or until heated through.
