Chicken Wings in Ginger Plum Sauce

  • 2 3/4 Tbsp peanut oil
  • 3 1/4 Lb chicken legs , or wings
  • 1 1/4 Tbsp cornflour
  • 2 Fl Oz water
  • 1 clove garlics , crushed
  • 1 1/4 Tbsp ginger , grated
  • 3 green shallots , chopped
  • 5 3/4 Fl Oz plum sauce
  • 1 1/4 Tbsp low sodium soy sauce
Heat oil in a heavy nonstick frying pan over medium high heat. Cook chicken about 15 minutes, turning until cooked through. Discard excess drippings from pan. Combine cornflour and water in a jar with a tight-fitting lid. Shake well and add to pan with remaining ingredients and wings. Bring to a boil and simmer, uncovered, 10 minutes, stirring occasionally until mixture thickens.
