Basil Spinach Salad

  • 1 bunch spinaches
  • 4 Tbsp basil leaves , shredded
  • 2 3/4 Tbsp pine nuts , toasted
  • 1 bacon slice
  • 2 3/4 Tbsp oil
  • 1 1/4 Tbsp white wine vinegar
  • 1 1/4 Tbsp sour cream
  • 1/2 tsp sugar
  • 1 clove garlics , crushed
  • 4 Tbsp grated Parmesan cheese , or Romano cheese
Combine first 3 ingredients in a bowl. Cook bacon in a small pan until crisp. Let cool. Combine next 5 ingredients in a jar with a tight-fitting lid. Mix well and drizzle over salad. Crumble bacon and add to salad with Parmesan or Romano cheese.
