Coconut Pudding Squares

  • 15 graham crackers
  • 1 package lowfat instant vanilla puddings
  • 1 package lowfat instant coconut puddings
  • 2 Cup light frozen whipped topping
  • 1 Quart evaporated skim milk
  • 1/4 tsp almond extract
  • 1 Cup peaches, sliced , chopped, canned or fresh
  • 1 Cup canned mandarin oranges , packed in their own juice, drained
Place half the graham crackers in a 9 inch square pan. Mix together the remaining ingredients except for the mandarin oranges. Pour half the the pudding mixture over the graham crackers. Add another layer of graham crackers. Top with remaining pudding mixture, garnish with oranges, and chill for 4 hours. Cut into 12 whole servings and serve.
