Double Chocolate Honey Ring

  • 1/2 Cup unsalted butter , softened
  • 1 Cup honey
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 3/4 Cup all purpose flour
  • 1/2 Cup cocoa powder , unsweetened
  • 2 tsp baking powder
  • 1 tsp salt (necessary)
  • 1 tsp baking soda
  • 4 Fl Oz sour cream
  • 1 Cup semisweet chocolate chips
  • 1/2 Cup walnuts , or peanuts, chopped
  • 2 Oz white chocolate
  • 2 tsp milk
Preheat oven to 325 ℉. Lightly butter a 12-cup fluted tube pan or bundt cake pan. Combine butter with honey in a large bowl and beat with an electric mixer until light and fluffy. Add eggs, one at a time, mixing thoroughly after each addition. Mix in vanilla. Sift flour and next 4 ingredients together in another bowl. Add half the dry ingredients alternately with half the sour cream to honey butter mixture. Repeat with remaining flour mixture and sour cream. Gently fold in chocolate chips and nuts. Pour batter into prepared pan. Bake 50-55 minutes or until a toothpick comes out clean when inserted in center.

Meanwhile, melt white chocolate in the top of a double boiler over medium heat. Stir in milk. Cool cake in pan on a wire rack 10 minutes. Remove cake from pan and cool completely on wire rack. Serve drizzled with white chocolate glaze.
