Triple Chocolate Torte

  • 1/2 Cup sugar
  • 4 Tbsp cocoa powder
  • 3 Tbsp all purpose flour
  • 1/4 tsp baking powder
  • 1/4 Lb bittersweet chocolate , finely chopped
  • 4 Fl Oz boiling water
  • 2 egg yolks
  • 2 Tbsp chocolate liqueur
  • 4 egg whites
  • 1/2 Cup sugar
  • powdered sugar , sifted
Preheat oven to 375 ℉. Combine first 4 ingredients in a mixing bowl. Add chocolate and boiling water, stirring until chocolate melts. Stir in egg yolks and liqueur. Beat egg whites at high speed with an electric mixer until foamy. Add the 1/2 whole cup sugar sugar 1 Tbsp at a time, beating 2-4 minutes, until stiff peaks form and sugar dissolves. Stir 1/3 egg whites into chocolate mixture, then fold in remaining egg whites. Pour in a lightly greased 8 inch springform pan. Bake 28 minutes, or until a wooden spoon inserted in center comes out clean. Cool on a wire rack 10 minutes. Remove sides of pan and cool completely (cake will be cracked on top). Sprinkle with powdered sugar.
