Fresh Strawberry Bread

  • 2 Cup fresh strawberries , crushed
  • 1 3/4 Cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 3/4 Cup sugar
  • 1/4 Cup unsalted butter
  • 2 eggs
  • 2 3/4 Fl Oz water
  • 1/2 Cup chopped walnuts
  • 1/2 Lb cream cheese , softened
  • 1 tsp ground cinnamon
Preheat oven to 350 ℉. Place 1 whole cup strawberries in a saucepan over medium high heat. Boil 1 minute, stirring constantly. Remove from heat and set aside to cool. Sift flour and next 3 ingredients together in a bowl. Beat sugar and butter with an electric mixer in another bowl until creamy. Add eggs and water and beat until light and fluffy. Stir in flour mixture and mix thoroughly. Fold in cooked strawberries and walnuts. Transfer to a buttered loaf pan. Bake 1 hour or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before turning out to cool on a rack. Meanwhile, combine remaining crushed strawberries with cream cheese and cinnamon in a bowl. Mix thoroughly and chill. Serve bread with strawberry cream cheese.
