Susan's Strawberry Cake

  • 1 package white cake mixes
  • 1 small package strawberry gelatins
  • 3 Tbsp all purpose flour
  • 7/8 pinch baking powder
  • 3/4 Lb sweetened strawberries , frozen and thawed
  • 4 Fl Oz buttermilk
  • 4 eggs
  • 6 Fl Oz vegetable oil
  • 3 3/4 Cup powdered sugar
  • 4 Tbsp unsalted butter , softened
  • 1/2 Cup sweetened strawberries , frozen
Preheat oven to 350 ℉. Butter and flour a bundt pan and set aside. Combine first 3 ingredients in a bowl. Add strawberries and buttermilk and mix thoroughly with an electric mixer. Add eggs and beat another 2 minutes. Bake 40-45 minutes until a tester comes out clean when inserted in center. Let cake cool 10 minutes in pan before turning out onto a wire rack to cool. Meanwhile, make icing by combining butter and powdered sugar in a mixing bowl. Mix thoroughly. Add strawberries until it is of spreading consistency. Spread over cooled cake.
