Sour Cream Coffee Cake

  • 1/2 Cup unsalted butter
  • 1 Cup sugar
  • 4 Fl Oz sour cream
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 Cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 4 Tbsp unsalted butter
  • 1/4 Cup brown sugar
  • 1/4 Cup sugar
  • 1 1/2 Tbsp ground cinnamon
Preheat oven to 375 ℉. Butter an 8-9 inch tube pan. Cream the butter with the sugar until smooth. Add the sour cream, eggs and vanilla extract. Blend until smooth. Combine the flour, baking powder, baking soda, and salt. Add to the sour cream mixture and stir until evenly mixed. Blend together remaining ingredients for the streusel topping. Add half the sour cream mixture to the pan. Place half the streusel topping on top of the sour cream mixture. Pace the other half of the sour cream mixture on top of the streusel topping. Sprinkle the remaining streusel topping on top. Bake for 45 minutes until springy to the touch.
