Chocolate Dipped Strawberries

  • 12 strawberries
  • 3/4 Lb chocolate , good quality
  • 2 Tbsp vegetable oil , cocoa butter or vegetable shortening
  • wax paper , or parchment paper
Combine chocolate and oil in a double boiler or a heat-proof bowl set above a saucepan of hot water over low heat. Allow to melt, stirring occasionally. Using a stab or candy thermometer, bring the temperature up to 115 ℉. Remove from the water and stir until the chocolate cools to 85 ℉ - 88 ℉. Holding the stem of the strawberry, dip it into the tempered chocolate to coat 3/4 of the berry. Place on a tray lined with wax or parchment paper. Refrigerate for 30 minutes to set. If you want to use both white and dark chocolate, dip the strawberries in the dark chocolate first and allow to set. Follow the same procedure for the white chocolate and dip the strawberries in the white chocolate on an angle. Place on a tray and place in the refrigerator until set.
