Steamed Clams

  • 72 steamer clams , scrubbed and rinsed
  • 1/2 Cup unsalted butter , melted
  • 4 Tbsp parsley , chopped
Cover the bottom of a large steamer or pot with 1 inch of water. Bring to a boil over high heat. Place a steamer basket in bottom of pot and add scrubbed clams. Reduce heat to low and cover tightly. Steam clams 5-10 minutes until just open. Serve clams with melted butter. Pour broth from steamer pot into wide mugs and sprinkle with parsley. Eat by pulling clams from shells with fingers. Dip in broth then into butter. All but tough skin around neck can be eaten. Clam broth is drinkable if desired.
