Shrimp Chowder

  • 2 Cup potatoes , diced
  • 3/4 Cup onion , chopped
  • 4 Tbsp celery , finely chopped
  • 1 1/2 Cup water
  • 2 Cup evaporated skim milk
  • 1/2 Lb uncooked shrimp
  • 3 tsp parsley , minced
Bring first 4 ingredients and salt and pepper to taste to a boil in a saucepan. Reduce heat, cover and simmer about 10 minutes.

Add milk and shrimp and continue to simmer a few minutes longer, or until shrimp turn pink. Serve soup sprinkled with parsley.
